Traditional Mustard & Mayonnaise Version
Bacon Horseradish Version

A good potato salad is always a hit at a potluck or a picnic. Here are a couple of my favorite versions.

The secret to any kind of potato salad is the egg to potato ratio. I learned this from a lady in Spokane Washington many years ago. However many potatoes you use you should always use an equal amount of eggs.

Traditional Mustard & Mayonnaise Version

Boil 4 yellow or russet potatoes, skins on until tender. Remove from heat, drain and cool with cold water. The skins will easily slide off of the potatoes. Set aside to cool.
In a large bowl combine 3/4 cup real mayonnaise, 1/4 cup dill pickle juice, and 1 tablespoons yellow mustard. Mix well and season to taste with fresh ground sea salt, fresh ground black beeper and a dash of cayenne pepper.

Using an automatic chopper, chop about 10 black olives, 4 hard boiled eggs, and 1 small dill pickle. Add this with 1/4 cup chopped white onions to the dressing. Cut the cooled potatoes into cubes and add to the dressing. Stir well. Add more seasoning as needed. Garnish with paprika.

Bacon Horseradish Potato Salad
Boil until tender 4 medium size red potatoes. Leave the skins on. Set aside to cool and then cut into small cubes.

In a large mixing bowl combine 1 cup real mayonnaise, 3 tablespoons creamy horseradish, 4 chopped hard boiled eggs, 3 pieces of crisp cooked bacon chopped, 2 green onions chopped and 10 black olives chopped. Season to taste with fresh ground sea salt, fresh ground black pepper and a dash of cayenne pepper.

Stir in potatoes and mix well. Garnish with paprika.


  • The traditional salad will look a little runny when first mixed, but refrigerating will help it to set up.
  • If you don’t want to fry bacon, the ‘real’ bacon in a jar works well for the bacon horseradish salad. DO NOT use bacon bits.
  • Do a taste test on your salads. Add more or less of mayonnaise, mustard, horseradish, seasonings etc. as you like.
This is a boil over guard.

It works beautifully when boiling potatoes. You can boil on high heat, never boil over and cook the potatoes a lot quicker. You can find them on Amazon.
