This version of a frittata is quick and easy to make. Delicious to eat!
Whip together a little milk and 4 large eggs. Stir in fresh chopped green pepper and season with fresh ground sea salt and corse black pepper.
In a large non-stick sauté pan heat a tablespoon of real butter on medium high heat. Add egg mixture. Cook tilting the pan and lifting the edges of the eggs to allow uncooked egg to go to the edge and under the cooked portion.
When nearly set, carefully turn over the frittata and sprinkle top with shredded cheese.
Remove from heat and cover to allow cheese to melt and eggs finish cooking.
Cut frittata in half. Makes two servings.

I’m still using the air fryer to make perfectly crisp bacon with no mess. It was perfect with the frittata.
