This is a healthier version of shrimp fried rice. It’s quick and easy to prepare. It tastes great!
Here’s what you’ll need.
- 1 small cauliflower
- 2 green onions
- 8-10 crimini mushrooms sliced
- 4 multi colored mini peppers diced
- 2 tablespoons butter
- sea salt and course cracked pepper to taste
- 3/4 cup tiny salad shrimp
- soy sauce to taste.
- 1 egg (optional)
- sesame oil (optional)
Remove leaves and stem form the cauliflower. Using large grating hole side of a food processor rice the cauliflower. Set aside.
In a large skillet or wok melt butter and sauté vegetables except cauliflower. Add more butter as needed. Stir in shrimp and cauliflower. Fry on medium high heat until semi-tender and heated through. Beat egg and stir it into vegetable mixture. season to taste. Spritz with a little sesame oil if desired.
