This is a great way to use leftover pork loin roast.

Chop leftover roast into tiny pieces. Add your favorite bbq sauce either bottled or homemade. I used bottled here but you can find my homemade sauce recipe at Heat meat and sauce in the microwave.

For the shell I used tiny white corn tortillas. Spray each tortilla on both sides with olive oil. Heat in a shallow pan long enough to slightly brown each side. remove from heat and fold in half. They should be soft and pliable.

To fill the shells I first added the meat and then topped with finely chopped green cabbage and green onions.

Be creative. If you like, add other toppings. Maybe tomatoes and shredded cheese.
