Happy New Year! This year our New Years Eve meal was airfryer bacon wrapped scallops and grilled shrimp. I served it on a bed of saffron yellow rice with lemon juice and drawn butter for dipping
To prepare the scallops pat them dry with a paper towel. Set airfryer at 400 degrees and pre-cook bacon strips for about 4 minutes to make them easier to wrap. Cut bacon strips in half lengthwise to make two narrow strips. Wrap each scallop with a strip of bacon and secure with a wooden toothpick.
Spray each scallop with olive oil and sprinkle with smokey paprika. Place in airfryer basket and process at 400 degrees for 10 minutes. Turn halfway through cooking time.Keep warm in a 150 degree oven while preparing shrimp.

Prepare rice according to package directions. I use Vigo brand yellow saffron rice.
Arrange the scallops and shrimp on a bed of rice. Serve hot.
