This is a quick, easy and delicious way to transform leftover pork chops into a great lunch.

I made two rollups using one pre-cooked Pork Chop.

It can all be done in the Microwave oven.

Chop the pork into tiny pieces.Put pork into a microwave safe bowl and douse with your favorite BBQ sauce. I prefer Sweet Baby Ray’s brand if using prepared sauce.

Microwave for 2 minutes. Set aside. Place low carb flour tortilla on a plate and sprinkle with shredded Mexican style cheese. Microwave for about 30 seconds to melt cheese. Add a portion of the pork in the center of the tortilla and roll up tight. Slice in half for serving.

Serve hot.
