A treat my mother Bonnie made for Christmas each year was Sugared Walnuts.
I can’t remember a Christmas Eve buffet that didn’t include the tasty walnuts.
My family grew English Walnuts so the nuts were plentiful and tasted great because they were fresh.
So recently when I found in my recipe box yellowed, tattered piece of paper on which my mother Bonnie Bowden has written my name followed by her recipe for Sugared Walnuts I had to give it a try.
Measure 3 cups of walnut in a large mixing bowl and set aside.
In a sauce pan combine 1 cup white sugar, 2 tablespoons honey and 1/4 cup water. Stir constantly and heat to 240 degrees (soft ball stage) . Continue stirring unto syrup begins to look creamy but still fluid. Add 1 teaspoon vanilla, blend and pour over buts stirring to coat. Turn coated nuts out on wax paper and let cool. Break apart the nuts.
Store in a sealed container. They freeze well too.
VARIATION:
- I think this would work well on other types of nuts. I plan to try it with pecans.
