Quick and easy chicken and rice is a great cold weather dish.

Here’s what you’ll need.

  • 2 cup roasted chicken diced
  • 2 crisp bacon strips diced
  • 2 tablespoons chopped leeks
  • 3 crimini mushrooms chopped
  • 3-4 mini bell peppers chopped
  • 3 pats butter
  • 1/2 cup frozen corn
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 packet 10 minute instant rice
  • salt and pepper to taste.

Prepare rice according to package directions. set aside.

Melt butter on medium heat in a large deep skillet. Add chopped vegetable and sauté until tender. Fold in chicken, bacon and corn. Add broth and continue to heat. Stir in cream and rice. Continue to heat . Salt and pepper to taste. Serve hot.

Note:

If you don’t have roast chicken, dice a chicken breast and cook in butter in a skillet until browned and cooked through.
