These simple corn fritters are a great side or just as a snack.
Here’s what you’ll need.
- 2 eggs
- 1 can petite white corn (drained)
- 1/2 cup shredded cheddar cheese
- 1/2 cup flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon smokey paprika
- 1/2 teaspoon spicy sea-salt
- 3 tablespoons olive oil
- 2 tablespoons butter
In a large mixing bowl whip eggs. Add seasonings. Mix in flour, soda, corn and cheese.
In a large skillet heat oil and butter on medium heat until bubbly. Drop small spoonfuls of corn mixture into oil and butter. brown on both sides and remove to a paper towel lined dish. Sprinkle with additional sea-salt if you like. Serve hot.
