This is a wonderful way to use left over roast beef. If you start with uncooked beef you can simply cut it into bite size pieces and boil with vegetables
Heres what you’ll need.
- 1-2 cups of leftover roast cut into bite size pieces. ( I cook roast in a slow cooker with 1-2 cups of beef broth and liquid smoke to taste.
- 1 red potato cut into small cubes
- 1 carrot cut into small cubes
- 1/2 white onion cut into small cubes
- 1 stalk celery cut into small cubes
- 6 cremini mushrooms cut into small cubes
- water to cover
- leftover broth/liquid smoke from roast or 2-3 cups beef broth and liquid smoke to taste
- 1/2 teaspoon spicy sea salt
- fresh ground sea salt to taste
- 1 package gnocchi
- 1/2 cup heavy cream.
Cover vegetables and beef with water. Cook on medium high heat until tender. Do not drain. Add beef broth and liquid smoke and other seasonings to taste.
Bring to a boil and add gnocchi. Gently boil according to package directions. reduce heat and add cream.
Serve hot. So Good.
