This is a melt in your mouth tender sirloin steak and vegetables. The method is so simple and the results are delicious.
We like a good round steak but with today’s crazy pricing we’ve discovered sirloin is less expensive (for the moment).
Here’s what you need.
- 2 sirloin steaks
- 2 mini yellow peppers chopped
- 4 crimini mushrooms chopped
- 1/4 cup chopped leeks
- flour for dredging
- 1/2 cup beef broth.
- 2 tablespoons olive oil
- fresh ground sea salt and coarse black pepper to taste
Using an electric mixer tenderizing attachment or a handheld tenderizing mallet, completely tenderize the steaks.
Heat olive oil in a large skillet. Lightly dredge steaks in flour and shake off excess.
On medium high heat brown the steaks on each side.
Reduce heat and add chopped peppers, mushrooms and leeks. Stir in beef broth and simmer until vegetables are tender. Salt and pepper to taste.
Transfer each steak to individual dinner plate and top with sautéd vegetables.
I served this with steamed asparagus. tasty!
